Yes, I like dark meat on any bird. White meat is dry and not good imho.

I had to stick to the game bird theme. It reminded me of some tradeing we used to do.

We traded ducks with an old Persian for cheese.
It was good stuff, like a dry cream cheese packed in brine. Sometimes habenero flavored, or jalapeno, or like an herbed mix. Whatever flavor it was always good, ate it on homemade flatbread.

He made it in his bathroom. I actually think it started in his tub, then hung in pantyhose to age, solidify...........I tried not to get many details.

It was always known as Duck cheese to me and my buddys, and was in high demand.
 
Confusius says, "When you spend more time on preparation, and more money on condiments to make it edible, one doubts the quaility of the of the original dining subject". Bobwhite, all white, always tender, since there are no old birds, a little butter and frying pan, lightly done. Priceless.

I would agree. I'm a roll strips in seasoned flour and sautee it kind of guy myself.

My list would be ruffies, pheasant, quail, sandhill, dove and then fowl (woodies and teal). It definitely is in the preparation and medium rare cooking that sets good food apart from just edible food.
 
How about just good old wild rice soup and Phez. Like we had for supper tonight:thumbsup:

Blue Grouse or Dusky are hands down #1. Their #1 favorite diet in the summer...berries!!! They taste like chicken with a hint of berry.

I couldn't agree more. However,I have a friend who won't hunt them as he can't stand to eat them. To each his own...
 
i love to hunt them but i hate eating them YUCK and golden you couldnt pay me to eat that wow i just am not that hungry i do kinda like quail but that is about it, like i have said before on here i give them all away
 
WOW, I probably shouldn't respond to this post as what I want to say would probably get me thrown off this forum. However, I am going to take the high ground and just say I will not hunt a gamebird unless I enjoy eating it. Just my opinion.

Bobwhite, then bobwhite, then bobwhite....then dove, then Phez.

I like mine, halved, seered in olive oil, then sauteed in red wine, onions and mushrooms over rice.


Or just breaded and fried.................
