Cleaning Birds, where and how you clean yours

usually all my birds are shot on my land so i dont have a transportation issue. however the hunters usually leave a foot as we put our thumbs in the throat, and rip out the head with spine all the way down leaving a foot or both feet. some of the guys would cut below the throat enough for the head to stay intact and haul back with the head on.

for me, i tell the hunters to clean the birds inside the barn where my mom's cats live and just clean the birds. it saves her a few days of feeding her cats. there are a set of other hunters from KS that come up too that they usually clean their birds in the field before they head back to the hotel. The Wisconsin guys clean th birds at my parent's barn to feed the cats. I miss those guys. they came every year and they stop coming a few years back and now my g-pa passed away from alzheimers in Sept 2010, im hoping i could contact them to hunt a few more years with them. One of them bought my g-pa's tractor 2 years ago. id like to try to buy it back if possible. i dont know their names for sure but will find out and see if anyone knows them OR if they are a memeber here.
 
I am never far from home most of the time, so I take em in and peel the skin back, fillet the boneless breast sides out, peel the skin on the leg and thigh, rip off the leg and thigh and thats that. Making zero mess, done in less then a minute.
 
The fastest and easiest way I have found is to lay the bird on his back then step on the wings grab him by the feet and pull him apart. The breast will be left on the ground with the wings attached for transport. Then you can cut out the thighs if you like. Try this trick you might like it.
 
I gut the birds, hose them out, cut the wings, legs, and tail off, then stuff them in a freezer bag feathers and all. The skin and feathers protect the meat from freezer burn. I smoked 3 last week and they were very good. The smoker cooker keeps them moist and tender.
