Velvetize pheasant with baking soda?

My daughter did something like that with chicken. I thought she used corn starch or rice flower but maybe it was baking soda. Whatever it was I didn’t like it , it glued everything together and eliminated the muscle fibers.

I think there are a few ways u can do it…we’ve done it with chicken, seemed more tender..,may try it using baking soda and deep fry in peanut oil after dusting chunks in shore lunch or some similar dry mix…
