New Year's hunt

Do you just breast them or do you keep the legs too?:)

We keep the legs these days (didn't for years). I still breast the bird with the wings left on, then take the back and legs apart (bird in 2 pcs, but legal for transport). Ever since seeing the video of how to get the tendons out, we've been enjoying the flavor of the legs!

As far as my reference to time, I believe it took me 2hrs to gut AND skin the deer. I've watched the process many times and I've never seen anyone take so long:eek: When it comes to cleaning pheasants, I need 2-3 minutes/bird, which this year has meant I'm cleaning a day's take in 5-6 minutes;):D

I'd buy you case of beer or a can of coffee to show me how to field dress one in 5 minutes. I wish I'd paid more attention when I was a kid and my family salvaged deer from the highways....those guys had it down.

I also agree that processing is fun. That's something I am fairly proficient with, having done it many times and having spent over a decade in the meat processing industry.

These tool make it a quick clean job of gutting. You will get faster and do a better job using these. I use them and it takes me 5-10 min to gut out a deer.

You're more than welcome to bring your boys and share a deer blind with me any day. Just like anything else, the more you do it the easier it gets. I highly suggest the video "Deer and Big Game Processing" by Outdoor Edge produced by Brad Lockwood. Got it as a gift from Cabella's and it's awesome! Takes you through the whole process from field dressing to the cutting board. Got a buddy that teaches and coaches with me that also does taxidermy. He had a buddy video him earlier this year and he had one field dressed in a little over two minutes!

I meant the deer! If it was taking you that long I figured you were trying to figure out how to breast a deer.:p

BTW: How do you get the tendons out of a pheasant's leg?

I wouldn't suggest it's easy, nor would I profess a high success rate, BUT if you break the knees and stand on the feet, while pulling on the wings.....the tendons will come out. Some birds are shot in such a manor they cannot be done this way. If a thigh or wing is destroyed, good luck. A quick youtube search will yield a quick demonstration.

It doesn't work with every bird. Soup is the only way we consume the legs I don't get the tendons out of. We're actually having pheasant soup tonight!

Ya know, I wondered if that's what you were suggesting:D But then I wondered if you were suggesting you could field dress a deer in less time than you could a pheasant, IF you were plucking the pheasant and keeping the legs....damn internet communication anyway.
 
Congrats to your boy. I'll never forget the first deer my son shot.

Concerning gutting deer, it takes me about 10 minutes. It would probably be less if I wanted to cut the pelvis, but I don't like doing it that way. I don't have the gear or facilities to take it much past gutting, so they go straight from the field to the locker.
 
My Western deer hunts are walk in only, pack the deer out type hunting.
I don't carry out bones, gut and bone takes about an hour. 2 trips 60-70 pounds total meat on a mature buck.
MN hunting is stand hunting, kill the deer, haul it to the shed and hang it with the loader. Skin then gut with it hanging from spaced hind legs,tidy like a locker plant. Skin a warm deer 10-15 minutes, skin a cold deer 40-45 minutes, skin a frozen deer, all Winter. :eek:

Funny you said that about skinning. The boy and I went out Saturday evening doe hunting and got one on the ground. I shot it since they would not come into the 100 yard kid range limit we have so the boy said take'em before it gets too dark. I made a nice 182 yard shot, but was lazy when we got home and waited to skin it till yesterday.

BTW...skinning a frozen deer yesterday took about 3 hrs too!:D
