What are some methods to try with a dog that has a hard mouth or who is prone to chomping a bird on the retrieve? (not eating, just zealous death chomps).
Any help will be appreciated!

What kind of dog?
How old?
Has it been force fetched?

Not knowing I would work on hold. when my PP starts mouthing it I grab his bottom jaw
and say NICE!
 
u-shaped fencing nails in a 2 inch piece of 2 by four. Leave the u end of the nail protrude from the wood. Both sides. Dog won't bite down. Best with wings under the nails
 
Geese just a bit Barbaric. I would work with post # 2 technique. Nails in the mouth could prevent any attempt to pick up game.
 
Put the little spikey fruit from a sweet gum tree in a tube sock and tie the end. Use that as your fetch dummy.
 
If its a really young pup , it could just be overwhelming excitement that it can overcome with repetition and age.
 
in the yard away from bird teach the dog to have a immediate strong recall, you want to make him run back to you, if he slows while recalling nick him to get him going faster

then use that recall command to make him come at a run immediately after he picks up the bird

this usually stops what you are describing without damaging his desire to pick up a bird

instead he will relate any correction to not coming fast

When I had the issue early on, I used frozen quail and kitchen training "fetch". I could get to the dog and enforce the command.
