Bird Cleaning

With pheasant, I cut out the spine, and when removing, everything except the lungs come out. I then run my finger under them, and they come out easily. Doves, though, I just take the breast. Unfortunately, I have not had occasion to hunt (or clean) other game birds, so I don't know how they compare to cleaning pheasant.

Have found after many-many birds—(pheasants)
That leaving that head on while skining
Cut both sides of the spine—
Grab head and pull
Then into bucket—
Just my opinion-and experience
 
That looks really good for breasted birds, how does it work for fully dressed birds?
Works just fine both ways—
On fullydressed/legally transported birds-just recommend cutting spine on both sides and breaking open —leaving one leg attached of course
