What do you wear?

Give up and get a WingWorks vest, then

Polyester, as much as possible. It will wick the sweat away. I like a poly/nylon pair of bird hunting pants, LLBeans fitted are very nice. I wear spandex type briefs, don't laugh too much, so I don't chafe in the crotch. Baby powder. Wool socks, light to medium weight. If I am going to be out all day I carry an extra pair in the truck. Layers, add or peel off as needed.

I always wear gloves because my hands aren't very tough. Bob Allen reg and insulated.

You can carry a wind breaker, a sweater, hoodie or whatever you might need for the day. Good boots. There are tons of threads on here.
 
Wing Works vests sure look nice, but it's around $275 to get it the way I'd like it. Can't get too excited about that. I've also looked at a few others that are less (Q5, Bird n' Lite).

I'm pretty much doing what you suggest dvmweb. Capilene base layer, hunting pants, wool socks, good pair of boots. Up top, I built off some of the advice of folks above on my last hunt (around 30 degrees, light wind) -- more/thinner layers: base layer, nylon shirt, sweatshirt (cotton blend) on top, then the old school vest. A lighter weight hat on my head. I was very comfortable, but a little cold when I started out (that was a pretty good thought from you guys).

I still sweated through to the sweatshirt, but not as badly. I'm thinking about a wool shirt and maybe a strap vest down the road.
 
I'm a big fan of gamehide brand products. My normal outfit for late season hunts is as follows: under armor knee high socks, jeans, gamehide briar proof pants (AMAZING), thermal under shirt, regular hoodie, gamehide briar proof vest (yes in Ohio the briar are so bad you need to protect from the torso up as well) and a off brand dollar store blaze orange beanie. I keep a carhartt jacket in the truck for extreme wind, but that usually takes care of everything.
 
Pretty old school when it comes to cooler weather, wool for me .
The bandana is ever present as well to keep my neck warm as is the campaign hat unless it's REAL cold, then it's a beaver trapper's hat!:)
My vest goes on top of everything else and thee chaps are rarely off my legs , for wind and thorns

Well, I broke down and bought a Wing Works vest. Wore it a couple times before the season ended here, and I'm very happy with it. Seems very well made, and should last a loooong time. Distributes the weight very well -- most of it's off my shoulders though it doesn't really feel like it's all on my hips. Great pockets for shell storage and water bottles. Game bag looks plenty big for a few pheasants. There's a smaller storage area on top of the game bag, and a couple other pockets tucked here and there.

Also bought a wool shirt. I wish I'd done that years ago. Good warmth but also breathes. Don't get soaked like cotton does.
