Thanks for the tip on how to get the tendons out of the pheasant leg. I believe it was posted last year sometime. I used this method Sunday and it works great.
You break the leg below the knee joint. Put your foot on the broken leg portion and grab hold above the knee joint and pull. The tendons are ripped out of the upper portion of the leg. It's slick and easy.
