Question to the experts

I have been uplanding the last 2 days since I am out of school. Took the dog out and we got 6 roosters, 1 hun (should have had more), and 1 sharptail. We are both very tired and the dog is limping on her front leg. This was our first hunt on wild roosters, I have taken my dog out on planted birds probably 10 times, and many times on mountain grouse. I have a few questions for you experts.

Why do roosters get every Russian olive bush between you and them, while hens get up and fly straight away?

How can 10 huns get up from the sparest cover and never be seen on the ground?

Why does my dog gets in a ditch and looks back at me like dad there is one just ahead of us, please try to keep your fat ass up with me so we can get him? :D
