I had a freezer bag full of pheasant legs and no idea what to do. I thawed them out and made tacos . Used this recipe as a guide. They turned out good, and I'm sure next time I can tweak it and get them even better. After braising the meat was so tender I simply put on nitrile gloves and shredded it by hand. I removed as many of the tendons in the drummies as I could find, still got one or two in my tacos, that's just part of eating wild game.
