My wife made chicken marsala last nite…one of my favorites! A friend made pheasant marsala recently…said it was great. Mushrooms, Marsala wine, shallots, cream, thyme, chicken broth, butter, olive oil…flour, salt and pepper dusting on the breast meat which had been pounded with rolling pin to about 1/2” thickness…”one upon a chef” chicken marsala…great over parsley’d egg noodles…gonna try with pheasant…marsala really has a fabulous flavor quality to it…
