The Mobridge Tribune, October 7, published an article about feeding troops traveling by train via Aberdeen and points west.

In 1945 the canteen cooked an estimated 9,000 pheasants; pheasant salad became a favorite part of the menu.

Pheasant hunts were organized to keep the canteen supplied with birds. Pheasants were plentiful then: Game and Fish estimated a pre-season population of 11Million in 1943; 15 million in '44 and 16 million in i945!

My, how times change...and the bird numbers!
 
North Platte, Nebraska had a canteen as well. They also served pheasant sandwiches. Great little book about it called Once Upon A Town by Bob Greene

My father went through North Platte coming back from the Pacific. He said it was a truly wonderful stop.
I think I still have the book Will have to see if their recipe is in it
