I never been able to stand the taste of Sharptails so yesterday after shooting 3 of them I was trying to decide what to do with them. So I fileted the breasts off and then ground them up with my meat grinder into a burger type consistancy. Then mixed in the hickory flavored spice and cure just like I would for ground beef or venison. Ran the mixture through the jerky shooter and dried them in the dehydrator. Not bad. I'm sure this would work for any upland birds or waterfowl. Just another option.
 
Last year one of the guys i hunt with made all of our pheasant into jerky. Turned out pretty good, just need a better shot finder. Just when you think you're safe, you bite into one and think of a few choice words.
