Goose Recipes

Anybody have any good goose recipes? I am worn out of making jerkey out of all of the geese I harvest.. Looking for a nice way to Grill them that I would actually enjoy and not just eat because I have to.. (am I asking to much? lol)
 
Main thing with goose is not to overcook it. When done right it is very good. Grill the same as a steak cooked rare-med rare, nothing over 145 deg max. Also good when sliced 1/4" thick and fried with seasoned fish fry, once again it doesn't take long.

Another thing to try is sous vide cooking. Put goose in vacuum bag with slight seasoning, place bag in 135 deg water for 2 hours. Remove from bags and sear both sides on hot skillet.
