Delicious Pheasant

When I was a young guy I watched Julia Child on TV make a French dish called coq au vin - chicken in wine. It was the first dish I made that was a step up from fish sticks, beans and franks, and minute steaks. Yesterday I made faisan au vin in a crockpot. I was surprised how good it was. Here's how:

1. Cut up brined pheasant
2. Brown pieces in olive oil and garlic
3. Put browned pieces and oil and garlic from skillet in crockpot and add:

a. qt. of chicken broth
b. half cup each of white and red wine
c. shot of whiskey (recipe called for brandy or cognac; had none)
d. carrot pieces
e. diced onion
f. sliced mushrooms
g. salt, pepper, and thyme
h. water sufficient to cover everything

4. Cover and cook 5 - 6 hours stirring occasionally

Interesting; so how many shots of whisky until it is done :p
That's the great thing about using a slow cooker. Long cooking times leads to a thirst which leads to . . . yep. Some dust cutter.
 
Please explain to me how you brine the pheasant first. Thanks.
Ive used a mixture of one cup salt, one cup brown sugar to a gallon of water. Brined mine over night.

Skin and gut it. Then let it soak in salt water over night in the refrigerator.
