this fella was baked with a can of sour kraut inside, the kraut provides all the moisture needed to keep the bird juicy and tender, a challenge when cooking geese and the kraut along with the drippings make a gravy to die for

Hard to beat a baked goose unless it's smoked. Next time you do one try oranges and apples stuffed in the cavity. Never tried Kraut but it sure sounds good!

the kraut flavor is not strong, what you are looking for is enough moisture in the cavity to keep it from drying out. in the past i have used orange but not apple, whatever, you need a lot like a really lot of something with moisture. the gravy was the biggest hit, just fantastic. tried bread and oysters one time, blew it, was terrible.
