His darn work kept getting in the way, but finally the smoker project is underway!

"All Nighter" wood stove for the hot box

24" pipe for the primary chamber

I think your name and your smoker have a lot in common:)

are you building it in place? if not how do you plan on moving it?

Is that 1/2" thick steel?
 
So, we have to get a forklift when we are ready to mount it on the trailer!

It is 3/8 thick and does weigh a ton that is for sure. We are estimating it will be pushing 1000#s before we load it on the trailer.
 
Took the holiday weekend off, but they are back at it today!

Getting some bling bling and some seals done, as well as starting on the secondary chamber. All this stainless us really gonna set it off once polished and the steel's painted!!

And the lid on the secondary chamber has hooks for hanging snausages!

Unfortunately we didn't have it painted up before the rain came, have some. Rust to buff out again. ...BUT!....we finally coordinated with the forklift and she went on the trailer today! !







 
She's ready to smoke!

After days of rain and having to buff her up three times to remove the rust that kept forming, I actually got her sprayed yesterday! Seriously the second I finished buffing it started to drizzle again, so I skipped taping off the stainless and started spraying! We still have to polish up the stainless anyway, so a touch of overspray won't hurt much more. I baked the spray on with a second seasoning, so she is ready for work!














 


One hour in the smoke!

So I am going to try and go with a 3 hour smoke, 2 hour wrap, 20- 30 minute glaze

Spraying with apple juice & apple cider vinegar every hour. When I go to wrap, I'll use honey, brown sugar and butter, with another light sprinkle of rub. I will glaze with a light coating of Sweet Baby Ray's!

Been a tad tougher to keep in the 230+ degrees range than I like. I still have some of the insulated bricks in the stove, think I'll take them out the next run!

First hour was hickory, just added a couple chunks of pecan, & will probably need to again during the third hour
 
No wonder Greeley has been smelling better!:thumbsup:
