Dove season arrives Sept. 1, Labor Day. What could be finer!? Anyone heading out for that? I hunt them in Sheridan County. Starting about 6 p.m. we sit by a windmill with a stock tank and an overflow pond and wait for them to come coursing in. Great fun and a tasty meal follows. I cooked some in a sauce of sweet canned cherries and fresh onions that was pretty tasty. Bacon wrapping them is good too. I like to soak mine in brine for 24 hours to lighten them up for a less gamey flavor. Anyone else have a good dove recipe?
